My most favourite thing to make for brunch is pancakes, usually on a long weekend when Jared and I have some time and the likelihood of having the fridge stocked is low. The ingredients are pretty simple and easy to keep stockpiled in your cupboard – take a look at my easy fluffy berry pancake recipe below. This weekend we had a long weekend here in Hong Kong so it was the perfect opportunity for a pancake brunch. I shot a little video on how I make my fluffy berry pancakes. Ingredients for my easy fluffy berry pancake recipe
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 Egg
3 Tablespoons of melted butter
Oil for cooking
Equipment
Non stick frying pan
Whisk
Mixing bowl
Lifter
Large cooking spoon
Method to make my easy fluffy berry pancake recipe
Combine all dry ingredients in a bowl
Mix slightly and make a hole in the centre of the dry mixture
Add the melted butter, egg and milk to the middle of the dry mixture
Whisk the mixture together until it is smooth and there are no lumps
Let the mixture sit for a few minutes
Heat your pan with a little oil and spoon in the mixture into individual pancakes in your pan (I usually use a large cooking spoon which gives me enough batter)
Add in some frozen, chopped berries on the top while cooking
When the pancake starts to bubble, flip it over and cook the other side of the pancake
Once the pancake has turned golden on either side, you know it’s done
Take your pancakes off the heat and serve immediately for best result
