Fluffy Berry Pancake Recipe

Oh Hey Cindy - Fluffy Berry Pancakes

My most favourite thing to make for brunch is pancakes, usually on a long weekend when Jared and I have some time and the likelihood of having the fridge stocked is low. The ingredients are pretty simple and easy to keep stockpiled in your cupboard – take a look at my easy fluffy berry pancake recipe below. This weekend we had a long weekend here in Hong Kong so it was the perfect opportunity for a pancake brunch. I shot a little video on how I make my fluffy berry pancakes. Still learning this video thing so go easy on me 🙂 Watch the video below on my easy fluffy berry pancake recipe, or watch on my YouTube Channel: https://www.youtube.com/channel/UC1NBCxNwQkqk7be5ll4Wz7w

Ingredients for my easy fluffy berry pancake recipe

  1. 1 1/2 cups all-purpose flour
  2. 3 1/2 teaspoons baking powder
  3. 1 teaspoon salt
  4. 1 tablespoon white sugar
  5. 1 1/4 cups milk
  6. 1 Egg
  7. 3 Tablespoons of melted butter
  8. Oil for cooking

Equipment

  1. Non stick frying pan
  2. Whisk
  3. Mixing bowl
  4. Lifter
  5. Large cooking spoon

Method to make my easy fluffy berry pancake recipe

  1. Combine all dry ingredients in a bowl
  2. Mix slightly and make a hole in the centre of the dry mixture
  3. Add the melted butter, egg and milk to the middle of the dry mixture
  4. Whisk the mixture together until it is smooth and there are no lumps
  5. Let the mixture sit for a few minutes
  6. Heat your pan with a little oil and spoon in the mixture into individual pancakes in your pan (I usually use a large cooking spoon which gives me enough batter)
  7. Add in some frozen, chopped berries on the top while cooking
  8. When the pancake starts to bubble, flip it over and cook the other side of the pancake
  9. Once the pancake has turned golden on either side, you know it’s done
  10. Take your pancakes off the heat and serve immediately for best result
  11. Top with some fresh berries and some Agave Syrup
  12. Enjoy
